Many people have been drinking this tea for thousands of years...

I have been drinking it for 5 years..The first thing I noticed was the softness of my skin, this was immediate, the first twenty four hours for me, and my energy levels sky rocketed by the third day of drinking this tea., I cannot tell you enough about all that I have witnessed since my beginning with this incredible tea...
The taste is somewhere between apple cider and a little tart tasting bubbly~I LOVE IT!!
Some History
The Russians launched on investigation, right after WW2, to discover why cancer was on the increase in their country. After the Boishevik Revolution and continuing thru WW2 Russia had experienced tremendous industrial growth. Factories and giant industrial cities were springing up all over & smokestacks were belching industrial smoke and vapors into their atmosphere. Industrial growth and increased military might ws the goal with no concern for the environment. Easily compared to the pollution in England when their industrial revolution was in full swing. Doctors, scientists and other investigators were sent to various parts of the USSR to run tests and investigate the causes of the Cancer Problem. During the investigation they found two areas (the Solikamsk & Berezniki districts) that were almost cancer free. (the few cases of cancer found in these 2 areas were new comers who had just settled there)...

The answer was ...Tea Kvass(aka Kombucha) not only were the people in these two regions cancer free, they were healthier and had longer life spans. Hundreds of years before, the Czar had been introduced to Kombucha by learned travelers that had brought it back from China. After a while the Czar remarked that this tea wine was no longer to his taste and instructed that it be given to the people. His comment was that now even the little people could make their own wonderful tea wind and would stop being covetous. Apparently these 2 areas had been making and consuming tea Kvass(aka Kombucha) ever since. The intense Soviet investigation coupled with other large bodies of evidence indicate that Kombucha is indeed a dramatic immune system booster and body detoxifier. A research facility was readying a batch of Kombucha for attempting to poison Stalin, and the treatment was abandoned. The most that the FDA has said is that it won't hurt...

"HOW TO BREW"

1. Bring three quarts of water to boil...
Continue to boil for ten minutes..


2. Add 1 cup of sugar and stir until dissolved, then continue to boil for five minutes. You can use brown sugar, but white is more antioxidant. You can use 1/2 cup, or one whole cup. one cup will be more antioxidant.

3. Add 4 to 6 tea bags, such as red rose or Lipton, to the pot AFTER you turn it off. If you already have a sensitive stomach, Green or Oolong tea can be temporarily used though they are not believed to be as effective...

4. Remove from heat , cover and steep tea for ten minutes...

5. Remove tea bags and allow tea to cool to room temperature...

6. Select a large gallon size fermentation container. Be very careful that your tea is not the slightest bit warm. Warm or hot tea will kill your Kombucha Mushroom.I use glass container jars. Suntea jars are not good unless you are willing to completely take the nozzle apart EACH time you use it, for proper cleaning!! This is important...

7. Add your room temperature tea to the selected container. Be very careful that your tea is not the slightest bit warm...

8. Remove ALL rings, and or metal from the area that will come in to contact with the mushroom. NEVER handle a mushroom near or with a metal object...

9. Carefully place your mushroom into the tea brew and cover the top of the container with a cheese cloth or a coffee filter, depending on the size of the mouth on your container. Some recommend securing the cheesecloth /coffee filter with a rubber band to prevent fruit fly infestation or attracting other insects. IF YOU GET A GNAT , inside the jar, YOU MUST DISPOSE OF EVERYTHING!!!!! No playing games with this stuff. Bury your mushroom outside, thank it. and Get another. DO NOT dump this tea down your drains, outside is OK...

10. Place your container out of direct sunlight. In a closet is best, where the temperature stays between 70 and 80 degrees. Leave the container undisturbed for 7 to 10 day. After 7 days remove the cover and look around the edges of the container for bubbles. These bubbles let you know that the tea is finished fermenting. For weight loss it is best to allow the tea to ferment for 10 to 14 days. Usually at the end of day 8 you are ready to harvest your first batch of tea and your first new mushroom...

11. To  harvest the tea, carefully pour through a strainer without removing the mushroom from the container. When the container is almost empty remove the mushroom and place onto a glass plate.Don't forget to remove all jewelry and metal from the area near the mushroom. The slowly peel away the baby mushroom that has formed on the underside of the Mother MUSHROOM while growing in the tea these past 8 days...

Congratulations!!!!You are the proud parent of a baby KOMBUCHA MUSHROOM!!!!

12. Do not dilute tea. Keep refrigerated and use within 14 days...

KOMBUCHA Do's and Dont's

I would like to share with you a few hints tips and everyday wisdom I have discovered so far on my journey with this incredible Manchurian Mushroom! AKA Kombucha~~First of all I would like to ask you to NAME your KoMBUCHA, they are alive and respond to love and loving thoughts.I named my first one Eve! Then second was ADAM!!!  hehehe!!Never  place your shrooms in the fridge~you will be refrigerating the tea after you strain it, but NEVER the mushroom~If you have extra babies, store them in a glass bowl or jar and cover with just enough tea to keep them moist..I rotate mine and they take turns being in the tea!!! My babies formed babies!!Each  week when I make tea, I seperate them and rotate them and cover with some fresh tea.I ship them in quart size plastic bags, but please place them into glass containers as soon as possible.Never EVER pour any of this tea down the drains of your house~unless you want giant Kombucha Mushrooms growing in your septic!!This mushroom's babies(scoobies) will grow to the size of the container you have your tea in~ in other words if you put a baby in an aquarium, you will get a square mushroom the size of the tank!!This mushroom pulls metal, this is why no metal objects etc...DO NOT use CRYSTAL jars or vases, they contain metal and this would pull into your tea~I like the idea of it pulling the metals from my body though!! YAYE!!!When you place your Kombucha into the tea~ many times it will sink, this is normal~ After a few days you will notice a white film on top of the container, this is your scoobie forming!! don't fool with the jar...just allow it to  sit peacefully!!When I harvest, I cover the mouth of the jar with cheese cloth, and pour the tea into my glass pitcher, THEN ,I place the mushrooms onto a GLASS plate. YOU may now peel your baby away from the mother mushroom.OR place them both into your next jar of tea. It's up to you...Now refrigerate your TEA. Enjoy as much as you want, but if you have health problems , please begin with a small amount, if you are sick, 2-4 oz a day and work up to larger amounts.I began with 2 oz a day and then 4 oz . a day for the first couple of months. Now I drink up to a quart a day, sometimes more some times less.If I get tired in the afternoon, I have a small glass of Kombucha tea and OFF I go again. But it dosen't feel jittery like coffee would make you feel. It is a very natural feeling energy source.And NEVER keeps me up at night. I am monitoring several diabetics who are on this tea for my own records. They are testing the blood sugars often throughout the day, and I HAVE WITNESSES them using less insulin. One man went from 4 shots a day , down to two shots a day, IMMEDIATELY...You test your sugar, so you will know ....If you are concerned about medications you are on, please consult your Physician, tell him you are beginning  with the Tea and allow him to monitor your meds.I have WITNESSED people lowering their doses of meds such as sleeping pills, depression medications , high blood pressure meds,insulin  etc..Stay in touch with your physician . I have a suggestion for your container,,, get a fish bowl!! they are clean and nice and round!! a great home for your mushrooms.You may use the baby mushroom and the mother over and over again to prepare tea.When is your mushroom ready to retire??If you notice the tea being THICK,If your mushroom turns BLACK~~If there is green mold growing on top of the tea, don't worry YOU WILL KNOW!!! believe me it looks like grass on top of the tea!!If this happens just pour the tea onto your garden and BURY the mushrooms in the ground. Remember to thank them for all of this beautiful medicine they have given you .For weight loss, drink the tea BEFORE meals.For weight gain drink the tea AFTER your meal.I like mine first thing in the morning, and as I said throughout the day  as needed for energy boosts.You may mix your kombucha with grape juice if the taste is offensive at first.If you are acidic, (you can test your PH levels with strips form the health food store),   allow the tea to ferment for extra days.7 day tea will be more acidic than 12 day tea.
